Pho 79 gets its name from the "national noodle soup" of Vietnam (also called pho), which is a fragrant, spice-infused soup made primarily with beef and rice noodles. Common seasonings used in this soup include chiles, basil, cinnamon, and star anise. The soup base is similiar to a French consomme. Curries are also used in Vietnamese cooking, but they are less spicy than Indian or Thai varieties. Coriander is very commonly used to season--chili, on the other hand, is used in very small quantity. Spring rolls are an adaption from Chinese cuisine. However, in contrast they are not deep-fried, and are prepared largely without fat. The Vietnamese prefer seafood over meat, using an abundance of shrimp. One aspect of Vietnamese food is a very tasty fish sauce called "nouc mam" that is added to many dishes and used as a salad dressing.
